Speckled pea shoots are the tender, young tendrils and leaves of pea plants, specifically those that exhibit a distinctive speckled pattern on their leaves. They offer a delicate, sweet pea flavor with a crisp, succulent texture. Unlike mature peas, they are harvested before the pods develop, focusing on the flavorful shoots themselves. The speckled appearance adds a visual appeal to dishes, making them a popular garnish and ingredient in salads, stir-fries, and other culinary creations. Their slightly nutty and fresh taste complements a wide range of flavors, providing a light and healthy addition to meals.
Microgreens tend to have a higher density of vitamins and antioxidants compared to their mature counterparts. This means you get a more potent dose of certain nutrients in smaller serving.
To maximize it's benefits, consume raw or lightly cook. For example, add them to your dish at the end of the cooking process or preferably as a garnish. Alternatively, adding them in fruit smoothie blends is the best way to enjoy these vitamin rich, mineral packed foods if you don't like the earthy taste.
