Kale Microgreens
Kale microgreens are essentially very young kale plants, harvested as their first true leaves appear. They're a concentrated source of nutrients, often considered a "superfood" because they pack a powerful nutritional punch. These tiny greens offer a milder flavor compared to mature kale, making them a versatile addition to various dishes. This variety, Red Russian kale, boasts beautiful colors and slightly different flavor profiles than other kale varieties. Because they are harvested so early, they contain very high concentrations of vitamins and minerals. They are used to add nutritional value and flavor to salads, sandwiches, and many other dishes.
Microgreens tend to have a higher density of vitamins and antioxidants compared to their mature counterparts. This means you get a more potent dose of certain nutrients in smaller serving.
To maximize it's benefits, consume raw or lightly cook. For example, add them to your dish at the end of the cooking process or preferably as a garnish. Alternatively, adding them in fruit smoothie blends is the best way to enjoy these vitamin rich, mineral packed foods if you don't like the earthy taste.
