Arugula Microgreens
Arugula microgreens are the young, edible shoots of the arugula plant, harvested when they're just seedlings. They offer a concentrated burst of peppery, slightly nutty flavor, similar to mature arugula but more delicate. These tiny greens are packed with nutrients and add a vibrant, spicy punch to salads, sandwiches, and various dishes. Arugula microgreens offer increased concentrations of Vitamins C, E, and K, as well as beta-carotenes, compared to mature arugula. Add them in dishes where you want that peppery kick in every bite.
Microgreens tend to have a higher density of vitamins and antioxidants compared to their mature counterparts. This means you get a more potent dose of certain nutrients in smaller serving.
To maximize it's benefits, consume raw or lightly cook. For example, add them to your dish at the end of the cooking process or preferably as a garnish. Alternatively, adding them in fruit smoothie blends is the best way to enjoy these vitamin rich, mineral packed foods if you don't like the earthy taste.
